Warm Sweet Potato Spinach Salad

holy delicious.

breakfasts are indeed my favorite. but i just made a damn good lunch (DGL). oh the joys of having summers off…if only i could work from home everyday and make DGLs all the time. i might appreciate lunches more  🙂

Warm Sweet Potato Spinach Salad “Recipe”

Bake half of a sweet tater at 375 for 20 minutes.

Pour a bowl of spinach. (yes, I pour my spinach. Don’t you?)

Add whatever you’d like to that bowl. I stuck with whatever I had in the pantry/fridge.

This included:

Onion, Walnuts, Dried Cranberries, Goat Cheese, Salt and Pepper to taste, drizzle of olive oil and balsamic.

When taters are done, slice and throw on top while still warm. Or let them cool if you prefer cold taters on a salad.

Then enjoy your DGL.
