This is one of my favorite lunches (as you know, it is hard for me to call a lunch good)!
Quick. Simple. Fresh.
Packed full of protein and healthy fats.
The best part of it all? Zero mayonnaise.
Recipe for the Amazing Avocado Tuna Salad
(serving size is 4-6 people- easy to add or take away ingredients to suit your needs)
4 cans of wild caught tuna (recommend wild planet)
1/2 onion (red onion is the best, but we only had a white onion available here)
1/4 cup of fresh, organic cilantro (coarsely chopped)
juice from 1 lime
salt and pepper to taste
optional: 1 tsp olive oil
Throw everything together in a bowl, mix it up (I prefer to mix it gently to keep the avocado pieces chunky), and enjoy on a piece of sprouted bread or fresh spinach!
