(Warning: We were all out of fresh mozzarella. My hubby freaked out when he got home…but somehow, he survived. 🙂 )

Make the wheat berries according to the package. Recipe was doubled in this pic.
Add sea salt, olive oil, and balsamic vinegar (to taste). Approx. 2 tbsp of olive oil and vinegar and 1 tsp of sea salt.
Add in fresh basil from your new herb window box and grape ‘maters sliced in half! [Enter imaginary fresh chunks of mozzarella here.] Or…anything else that makes your heart sing.

normally, there would be flashes of bright white with the addition of mozzarella. however, this salad is still delicious, without it!
this salad offers a wonderful freshness with the fresh basil and tomatoes. the wheat berries give the salad a great texture; a firm, juicy burst of wheat.
