a simple, yet comforting recipe.
as always, all the ingredients are whole, natural, and recognizable.
after coming in from a good lawn mowing…(i love the stripes my mower creates… almost as much as i like the stripes my vacuum makes on the carpet)…i was craving some good ol’ southern comfort food.
the abundance of grits and shrimp in my house made the decision easy.
garlic shrimp and grits recipe
1 cup of stone ground grits
3 cups of water
1 cup of milk (i used light coconut milk here, but any will do)
2 tbsp butter
1 tsp salt
1/2 cup sharp cheddar cheese
2 minced garlic cloves
1 lb shrimp (cooked however you like them!)
basil, coarsely chopped (preferred amount for topping)
grape tomatoes, sliced in half (preferred amount for topping)
bring the water, milk, and salt to a rolling boil. stir in the grits and reduce heat to low. simmer for about 15 minutes, or until desired consistency. add in the cheese and garlic.
my shrimp cooking method: i cover my thawed shrimp with water in a pan and cook them until they turn light pink- takes no more than 5 minutes! (watch carefully so they don’t overcook and become tough!)
serve warm grits with cooked shrimp, basil, pepper, and tomatoes on top.
such a quick and delicious meal! ready in 20 minutes, tops!
