Honey Dew Chilled Soup with Watermelon Salsa

Another fabulous way to eat your fruits!

While watching “The Chew” this afternoon, there was a great recipe for a Honey Dew Soup. Their recipe included a “simple syrup.”

 The best part of my modified recipe is that  there is no added sugar. Everything is fresh and natural. You are getting all of the fruit’s natural sugars, and consequently, vitamins and minerals!

So refreshing and perfect for a hot summer day!  Hope you enjoy 🙂

Topping: Watermelon salsa

(not pictured- 1/2 of a lime)

Recipe (for 2 servings):

Mint and Ginger Honey Dew Soup

half of a honey dew melow (reserve a few pieces for the salsa)

half of a lime, juiced

1-2 tsp grated lime zest

4-5 mint leaves

1/2 tsp grated ginger

Directions: blend ingredients. pour immediately for serving if honey dew was previously chilled. if not, store in refrigerator until chilled.

watermelon salsa below:

Watermelon salsa:

1/4 cup of watermelon, finely diced

1/4 cup of honey dew, finely diced

2-3 mint leaves, chopped

sprinkle of salt (optional)

directions: chop ingredients and mix.
