The Perfect Bowl: Chicken and Butternut Squash with Sauteed Kale

a very easy fresh, delicious lunch or dinner!

 

 

Ingredients for 1 serving (easy to double or triple!): 

1 tsp olive oil

1/4 cup butternut squash

1 chicken breast

1/2 tsp thyme (more or less to taste)

fistful of kale

salt and pepper to taste

dried cranberries/blueberries for garnish (optional)

Directions:

Sautee the chicken breast with 1/4 tsp olive oil in a pan.

In a separate pan,  sautee the diced butternut squash with 1/4 tsp olive oil and 1/2 tsp of thyme for about 5-6 minutes.

Add the kale to the squash pan and cover. Cook until the kale has wilted.

When the chicken is finished, coarsely chop, and add salt and pepper to taste.

Throw everything together in a bowl, and enjoy! The best part is no dressing is necessary for this delicious meal! The dried cranberries give off a hint of fall and a delicious sweet punch.  It would also taste delicious with diced fresh apples!
