Cranberry and Apple Steel Cut Oats (cook ’em while you sleep!)

Steel Cut Oats are the bomb.com.

They just take a long time to cook.

Problem solved.

Set up your crock pot full of oats the night before, and wake up to a delicious warm breakfast!

Recipe adapted from The Yummy Life.

Ingredients:

1 cup steel cut oats

1.5 cups of milk (or dairy alternative…I used almond milk)

1.5 cups of water

2 tbsp butter (cut into chunks)

1 tsp cinnamon

1 apple (diced)

1/2 cup cranberries (optional for an added tartness. if omit, use an additional apple, or another fruit!)

2 tbsp maple syrup (optional)

 

Directions:

1. Grease every corner of your crock pot with cooking spray or butter (very important step if you don’t want to take a hammer and chisel to it the next day!!).

2. Add all ingredients, stir, and set on low for 7 hours.

 

2. Sleep in an extra 20 minutes and wake-up to a hot, already made, delicious breakfast!

 

My favorite part are the crispy clusters that come from the edge of the crock pot!

 

 

 

add a splash of cool milk…

 

 

and/or add walnuts, brown sugar, pecans, bananas….the possibilities are endless!
