A delicious, easy breakfast, lunch, or dinner for this week!
6 Eggs (more or less depending on serving size)
Black Beans (rinsed)
1/4 cup of diced Jalapenos (more or less to taste)
1/4 cup of diced onions (more or less to taste
1/2 cup Spinach (more or less to taste)
1 bunch fresh cilantro
Salsa/hot sauce (optional)
1. Make the Whole Wheat Tortillas (or buy a pack)
2. Rinse the black beans and pour into a pot. Add jalapenos, diced onions, and spinach. Cook on medium heat until hot.
3. Scramble the eggs to your liking (my scramble recipe: put eggs into a bowl. Add 1/2 cup of milk. Mix with fork. Add to pan on low heat. Gently slide the bottom of eggs to the slide and tip the pan so that the uncooked eggs fill in the space. Repeat until the eggs are fully cooked. )
4. Add the eggs to a tortilla. Top with bean mixture, salt, pepper, hot sauce, and fresh cilantro.
Easy, cheap, and healthy meal!
