I had these ingredients on hand and decided to throw them in a tortilla to make a yummy quesadilla. Easy and delicious!
Ingredients (serving size):
1 container of mushrooms, washed and chopped
1/2- 1 whole large onion, sliced
1 tsp olive oil
any type of cheese you have on hand or like (I used feta)
butter to grease skillet
1. Slice the mushrooms and onions. Add to a saute pan preheated with olive oil.
2. Cook the onions and mushrooms on medium heat until caramelized (about 7-10 minutes). Stirring every couple of minutes.
3. Once the mixture is caramelized butter a large skillet and start heating up a tortilla. Add the onion mixture and feta cheese.
4. Add the other tortilla on top and let cook for another 7-8 minutes (on low-medium heat).
Slice tortilla and enjoy a delicious meal! Perhaps even with spicy snap peas on the side 🙂
