This marinade was in the “30 minute vegetarian grilling” book mentioned in my grilled eggplant dip. It is AWESOME and full of wonderful thai flavor. I really think it would be deelish with any meat or veggie that you throw on the kabob!
It is also SO easy- the best part!
(don’t judge me and my dirty grill 🙂 )
1 container of whole mushrooms, sliced into quarters
3 garlic cloves, minced
1 tsp Thai red curry paste
2 tbsp chpped fresh cilantro
1 tsp grated fresh gingerroot
2 tbsp soy sauce
1 tbsp brown sugar
1. Wash and wipe your mushrooms. Then slice into quarters.
2. Mix together the rest of the ingredients.
5. Let marinate for a minimum of 30 minutes.
6. After marination, feed onto kabobs and grill on high heat for 5-10 minutes. (you can also bake these for about 10 minutes).
These are delicious and FULL of flavor!
