Blueberry Banana Oatmeal Muffins


These muffins are a great thing to fix on a Sunday afternoon- They not only fill the house with aromas of blueberries, they also help make Mondays just a little bit sweeter. They allow you to get a few more minutes of sleep because they require no prep in the morning! Eat them at room temp or pop 1 or 2 in the microwave for 30 seconds! Makes breakfast SO easy, yet still delicious!

I found a recipe very similar to this one on Pinterest. I modified it and added a few things to my liking.


2 cups oatmeal

2 eggs

2/3 cup of almond milk

1 tbsp baking powder

dash of salt

2 extra ripe bananas, mashed

1 tsp cinnamon

1 tsp vanilla

1/2 cup fresh or frozen blueberries


1. Mix the liquid ingredients. Then add the dry ingredients (everything but the blueberries).


2. Add blueberries.


3.  Scoop batter into a greased muffin pan.


4. Bake at 375 degrees for 10-15 minutes, or until the outer edges are turning golden brown. Let cool for 10 minutes before running a knife around the edge and removing.


Enjoy a delicious, healthy breakfast muffin!
