1 Mango, diced
1/4 cup coarsely chopped cilantro
juice of 1 lime
2-3 tbsp chopped green onions
1-2 avocados, diced
1 jalapeno, finely diced
1-2 lbs scallops
salt and pepper to taste
1/2 tsp olive oil or butter for sauteing
1. Chop up all of the fruit and veggies.
2. Saute the scallops in olive oil for 5-7 minutes, or until lightly browned.
3. Put cooked scallops in a bowl. Add all of the other ingredients together, mix.
5. Enjoy with a side salad and a piece of delicious naan!
