Caribbean Scallops

Nick and I make a great cooking team….we love working together to create flavors reminiscent of past travels.  Necessities? Simple, always fresh, full of herbs, and bursting at the seams with flavor.  The ingredients in this meal takes us back to the Exumas in the Bahamas. …

Ingredients:

1 Mango, diced

1/4 cup coarsely chopped cilantro

juice of 1 lime

2-3 tbsp chopped green onions

1-2 avocados, diced

1 jalapeno, finely diced

1-2 lbs scallops

salt and pepper to taste

1/2 tsp olive oil or butter for sauteing

Directions:

1. Chop up all of the fruit and veggies.

2. Saute the scallops in olive oil for 5-7 minutes, or until lightly browned.

3. Put cooked scallops in a bowl. Add all of the other ingredients together, mix.

5. Enjoy with a side salad and a piece of delicious naan!
