A delicious bowl full of tons of vegetables, great crunch, and wonderful fresh enzymes since all the vegetable are raw!
Ingredients:
1/3 cup red onion, diced
2 tomatoes, diced
1 cup broccoli, chopped small
1/2 red pepper, diced
2 fresh jalapenos, diced
1/2 cucumber, diced
1/2 cup feta cheese
1 can of chick peas
3/4 cup couscous (uncooked)
salt and pepper to taste
optional toppings:
green onions
fresh basil or fresh parsley, chopped
peanuts
siracha
Directions:
1. Chop your veggies.
2. Follow directions on package to make couscous.
3. Rinse chickpeas.
4. Add all of the ingredients together. Mix.
4. Add feta cheese.
enjoy a delicious bowl of couscous and add any toppings you’d like!
it is super delicious chilled (for lunch the next day!) as well!
