Stopped by the grocery on the way home from the gym tonight (reminder: it is always a bad idea to go to the store when you are hungry!)…I was, indeed, starving. So I was looking for a quick, yet delicious meal.
Decided on this little gem. Super easy, delicious, and I’m obsessed with cilantro and guacamole, so of course I loved it.
Frozen or fresh shrimp
Guacamole (homemade or prepackaged…always check the ingredients for weird stuff)
fresh lime juice
fresh jalapeno, diced
salt and pepper to taste
1. Make shrimp according to package or preference. I found some delicious frozen shrimp (fresh is hard to come by in my town), boiled some water, and threw them in for 2-3 minutes.
2. Then I threw the shrimp in a bowl, added the prepared guacamole, cilantro, jalapeno, and squeezed half of a lime all over. I finished the dish with a sprinkle of salt and pepper. Throw together a salad for the side!
Delicious, easy, and healthy!
