The perfect summertime dinner.
Easy, healthy, and delicious 🙂
Shrimp (as much as you need for the amount of people you are serving)
1 can of black beans
jalapenos (fresh or canned)
Polenta (prepackaged for ease)
Old Bay Seasoning
Salt and pepper to taste
1. Cut the polenta into 1/2 inch slices.
2. Drizzle a little bit of olive oil and place the polenta into a skillet. Flip when brown- takes between 5-10 minutes depending on stove top. Repeat with other side.
3. While the polenta is browning, prepare the water for the shrimp. Add the beans and jalapenos into a separate pot and put on low heat. Add the shrimp to the water when it is ready (obviously not pictured).
4. Put the beans and jalapenos on a plate, add the shrimp, sprinkle with old bay, top with advocado, polenta, and season with salt and pepper to taste. (if you want, pop some kale in the oven while making everything thing else on the stove top for some yummy kale chips!!)
