1 can of beans of choice
1/2 of a red onion, diced (approx 1/4 cup)
1/2 zucchini, diced (approx 1 cup)
2 fresh jalapenos, diced
1 tbsp olive oil (drizzled on veggies)
Salt and pepper to taste
Cotija or Feta Cheese
1/2 cup chopped cilantro
