Roasted Poblano and Golden Potato Tacos

Vegetarian tacos get a bad wrap (get it?) for being “flavorless.”
I might argue these tacos have more bang than the “traditional meat” taco.
The fresh herbs bring delicious highlights to this dish.
I modified this recipe from one in the Food Network magazine by pumping up the popping, most flavorful ingredients!

Ingredients:

3-4 poblano peppers, roasted

3 yukon golden potatoes (sliced into 1/4 inch pieces)

1/2 cup fresh cilantro, chopped
1/2 cup fresh parsley, chopped
1 white onion, sliced thin
12 oz mushrooms
1-2 cloves of garlic
juice of 2-3 limes
2 tbsp butter
2 tbsp olive oil
salt and pepper to taste
Cotija or any cheese to your liking
Cholula
Corn Tortillas (preferably La Banderita or homemade- check the ingredients before purchasing)
Directions:
1. Broil the poblano peppers (about 10 minutes on each side- but keep watch depending on oven temps).

2. While the peppers are broiling, put potatoes in a large skillet and cover with water. Season with salt and pepper. Bring to a simmer and cook 4-6 minutes (just until they begin to get tender). Drain.

3. Reheat the skillet, add olive oil, and cook until golden crisp. Remove potatoes and sprinkle with 1/3 of the herbs.

4. Heat the butter in the skillet and add the onions. Cook until golden brown. Add the mushrooms and beans, cook until warm.

5. Meanwhile, peel back the skin of the roasted poblano peppers and cut into 1/2 inch slices.

 6. Add the poblano, garlic, and another third of the herbs (save the last third of the fresh herbs for additional toppings) to the onion mixture. Then add the juice of 1-2 limes.

7. Saute until everything is heated through!

8. Serve with warm corn tortillas (see below for recommended corn tortilla brand), potatoes, and poblano mixture.

Sprinkle with cotija cheese, lime slices, rest of the fresh herbs, and cholula sauce.

side note: after searching through multiple brands of corn tortillas, I was pleasantly surprised to find a brand that had only three ingredients! this also means they won’t last as long, so be sure to re-wrap and refrigerate after opening to extend their life 🙂
